"Chubby's" Pizza

I had frozen some dough from THIS recipe a couple weeks ago.  I also had some Mexican food leftover from a restaurant we like called Chubby's (beans, chile verde).  I thought it was a good idea to make a pizza with the leftovers.






Dough
1 cup of refried beans
3/4 cup chile verde
1-2 cups shredded yogurt chipotle cheese
Lettuce
Tomatoes, Diced
Avocado, Diced

Just layer the beans, chile verde and cheese onto the dough and baked for 15 minutes at 500 degrees.  Then top with lettuce, tomato and avocado.  This turned out so delicious!  I loved it.

Corned Beef and Cabbage

I made corned beef and cabbage for St. Patty's Day.  I knew I needed to put it in the crock pot because of time restraints so I used a couple different recipes (mostly using THIS ONE as a guide) to make it how I wanted it.

Ingredients:

3 pound corned beef brisket with a seasoning packet
Half a bag red potatoes, quartered
5 large carrots, diced
1/4 cup chopped parsley
1 head of cabbage, cut into chunks

I put the potatoes, carrots, chopped parsley and corned beef brisket (seasoned with the seasoning packet) in the crock pot with 3 cups of water.  I cooked it on low for 8 hours.  Then I took the meat out and put the cabbage in and cooked for another 1 1/2 hours.

This was delicious and very easy.  I was proud of my first try making this meal.  'Til next year!

Parmesan Kale Chips

These have been all the rage lately and I had a bunch of kale from Bountiful Baskets, so I decided to make them.  I either made them wrong or am just slightly less enthusiastic as others about them.  They are okay... but not my favorite. Give me a bag of Doritos :)

No, no.  For a healthy snack they really are pretty good.

Vanilla Steamer

For years I've been purchasing vanilla steamers from coffee shops/stands.  No more.  I made my own this morning and it took less than three minutes and tastes JUST as good as a purchased one.

Ingredients

1 cup milk (whatever kind you like - I used 1%)
1 tablespoon honey
1/4-1/2 teaspoon vanilla extract

Place milk in a microwave proof mug or cup.  Microwave on high for 2 minutes.  Stir in honey and vanilla extract.  Mix well.

Serves 1

Spicy Shredded Pork

This recipe is adapted from Pioneer Woman's Shredded Pork.  I would have made it exactly like hers but I had different meat and less time on hand.



  • 3-4 pound pork roast
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • 1 Tablespoon (to 2 Tablespoons) Salt
  • Pepper To Taste
  • 3 cloves (to 4 Cloves) Garlic
  • 1 Tablespoon (to 2 Tablespoons) Olive Oil
  • 2 Tablespoons (to 3 Tablespoons) White Wine Vinegar
  • 1/4 cup Brown Sugar
  • 2 Tablespoons dried onion flakes (you can use one whole medium onion cut up, instead)
  • Lime Wedges
  • Sour Cream, Shredded Cheese, Cilantro

Mix ingredients oregano through dried onion flakes in a blender until they are completely combined.  Cut visible fat from pork roast and rinse.  Put pork roast in a slow cooker and cover with the blended mixture.  Put two cups of water in the slow cooker over the meat.  Cook on low for about 8 hours.  Shred with a fork and serve however you'd like.  I put lime juice on top of my meat, on a tortilla, with cilantro, shredded jalapeno cheddar and sour cream.  Delicious!

Pioneer Woman's Perfect Pancakes

I love pancakes.  So much.  My husband thinks they are below waffles and French toast, but I think they are #1.  Sunday morning I made Pioneer Woman's Perfect Pancakes and they were so tasty.  The batter makes a ton of pancakes, so make sure you're going to be feeding a few people or be prepared to eat leftover pancakes the next couple mornings.  We covered ours in butter, syrup, and peanut butter.  Yum! There's not much better than delicious breakfasts on lazy Sundays.

Caprese Chicken Sandwich


My favorite sandwich in the world!

Ciabatta Bread Slices
Olive Oil
Balsamic Vinegar
Fresh Basil Leaves
Thin Chicken Cutlets, Baked
Roma Tomatoes, Sliced
Fresh Mozzarella, Sliced

Pour olive oil and balsamic vinegar on one side of sliced Ciabatta bread.  Put in the oven and broil for 1-2 minutes, until the edges are crispy.  Put on fresh mozzarella, tomato slices, fresh basil leaves and baked chicken cutlet.

The best thing, ever.

Pizza Crust & Caprese Pizza

Last night I made homemade pizza. I started with Pioneer Woman's Pizza Crust.


CRUST
Ingredients:

FOR THE CRUST (MAKES TWO CRUSTS):
1 teaspoon Active Dry Or Instant Yeast
4 cups All-purpose Flour
1 teaspoon Kosher Salt
1/3 cup Extra Virgin Olive Oil

TO MAKE THE CRUST:

Sprinkle yeast over 1 1/2 cups warm (not lukewarm) water.
In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined.

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and store in the fridge until you need it. ***It's best to make the dough at least 24 hours in advance, and 3 or 4 days is even better.

Then I put on:

Pizza sauce
Fresh mozzarella slices
tomatoes
fresh basil leaves

It was yummy!  I can't seem to make the crust bake in the middle though.  It was really dough-y.  If anyone reads this and knows a trick, will you let me know?  It happens every time I bake pizza.

Pioneer Woman's Orange Mini-Muffins with Brown Sugar Glaze

THESE are tasty!  Especially warm out of the oven.  Mine got a little toasty on the bottoms/sides, but they still tasted good (I think).  They were easy to make, too.  A great brunch idea!
