We have some jalapenos in our garden so I wanted to use some in burgers. I used Pioneer Woman's "his" burger recipe (minus bacon) as a jumping off point, and they were SO delicious!
Ingredients for 4 burgers - Adapted from PW
1 lb. ground beef
1/2 t salt
1/4 t ground pepper
2 squirts Worcestershire sauce
1/4 cup milk
Bakery buns (much better than the bagged hamburger buns)
Mix all of these ingredients together in a bowl and then form into four hamburger patties. Grill them over medium heat and melt cheese over top.
Toppings
Fresh slices of jalapenos, seeded
Hot pepper cheese slices
Ketchup
Tomatoes
Pinch of fresh cilantro leaves
We melted some cheese on top, covered them with fresh jalapenos and then added ketchup and tomatoes because they would have been dry. I was going to make chipotle mayo for the buns but these were already really spicy and that would have taken them over my limit.
The burgers themselves were so moist and yummy - and I loved the spiciness.

Dorito Casserole
THIS dish is anything but healthy. I probably shouldn't have made it for that reason, but it was oh-so-good! It was flavorful, spicy-ish, easy, creamy, crunchy, cheesy. I love Doritos but I never let myself buy/eat them. This was a nice little treat for myself. Definitely a good comforting meal. Yum-o!

Pioneer Woman's Spicy Dr. Pepper Pork
I made THIS in the crock pot instead of in a pot in the oven. Pretty sure it doesn't make much of a difference except crock pot seems easier to me. I served it on rolls with garden tomatoes alongside mac and cheese. It's pretty good, but not my absolute favorite. I like the flavor of some other crock pot meat dishes better, I think. It was yummy - just not on my favorites list. It's spicy but not overpoweringly so.

spicy burgers with chipotle cream.
I made THESE delicious burgers last night. They are super easy to make and FULL of flavor. Everyone said they were "amazing". I will definitely make these again. I served them with tomatoes and avocado on top. I couldn't find poblano chiles at the store, so I used another kind. I think any medium heat pepper will work. Make these at your next BBQ!

Spicy Shredded Pork
This recipe is adapted from Pioneer Woman's Shredded Pork. I would have made it exactly like hers but I had different meat and less time on hand.
- 3-4 pound pork roast
- 1 teaspoon Dried Oregano
- 1 teaspoon Ground Cumin
- 1 teaspoon Chili Powder
- 1 Tablespoon (to 2 Tablespoons) Salt
- Pepper To Taste
- 3 cloves (to 4 Cloves) Garlic
- 1 Tablespoon (to 2 Tablespoons) Olive Oil
- 2 Tablespoons (to 3 Tablespoons) White Wine Vinegar
- 1/4 cup Brown Sugar
- 2 Tablespoons dried onion flakes (you can use one whole medium onion cut up, instead)
- Lime Wedges
- Sour Cream, Shredded Cheese, Cilantro
Mix ingredients oregano through dried onion flakes in a blender until they are completely combined. Cut visible fat from pork roast and rinse. Put pork roast in a slow cooker and cover with the blended mixture. Put two cups of water in the slow cooker over the meat. Cook on low for about 8 hours. Shred with a fork and serve however you'd like. I put lime juice on top of my meat, on a tortilla, with cilantro, shredded jalapeno cheddar and sour cream. Delicious!

Chipotle Chocolate Chili
Another thanks to my sister-in-law for finding an amazing recipe. I made this Chipotle Chocolate Chili on Sunday and it is delicious. Mine turned out a little spicy, but not too much. I used 1 whole oz. of chopped chocolate instead of a 1/2 oz. It is yum!!
