Chocolate Chip Cookie Dough Brownie Bombs

These concoctions are easy to make (although slightly time consuming with waiting for things to freeze/cool/etc.) and are wonderful for chocolate lovers.  They were a bit too much for my taste, but everyone else liked them a lot.  It's basically a ball of cookie dough, covered with a thin brownie and dipped in melted chocolate.  Chocolate overload!  Here is the recipe.

Stadium Brownies



I found this idea on the back of a Ghirardelli brownie mix box.  I thought it sounded easy and interesting so I threw it together.  Lots of people liked them and I thought they were pretty good -- although I think the brownie itself was why they were good in the first place so that's kind of cheating.


1 Brownie Mix
1/2 cup salted peanuts
1/2 cup semi-sweet chocolate chips
3 cups popped kettle corn

I just popped a bag of kettle popcorn in the microwave.  Prepare the brownie mix as normal.  Spread the brownie batter in a lightly greased 9x13 pan.  Sprinkle the popcorn over the top, followed by the nuts and the chocolate chips.  Press the toppings slightly into the batter.  Bake at the temperature indicated on the box, for 30-35 minutes.

These are pretty fun!

Cookie Dough Brownies


To make these delightful little treats follow THIS recipe - except I was in a hurry and made the brownie part from a Ghirardelli brownie mix (the best brownie mix ever).  I usually don't like to do this but with the kitchen project still in the works and not a lot of time, a boxed mix was just what I needed.  I made a thick batch and left them a little gooey inside, how my husband and I like.  They were so yummy - and the cookie dough is egg free so there is no taboo eating it.  I found myself wanting to lick off the top cookie dough part and then eat the brownie so I could taste each separately to its fullest.  I got many-a-compliment from co-workers/husband on these - so definitely make a batch for the cookie dough lover in your life.

Peanut Butter Cup Brownies


My favorite candy?  Reese's Peanut Butter Cups, Reese's Pieces, Reese's Sticks.  Seriously.  I LOVE peanut butter and chocolate.  A s'more is practically inedible to me nowadays if it doesn't have a Reese's in it instead of the standard Hershey's bar.  Thus, these brownies will be a permanent part of my life from now on.

Go to THIS LINK for the recipe.  I may have added a little more peanut butter in each brownie than just 1/2 teaspoon (more like a full teaspoon).  And I didn't get 40 mini brownies out of it - I got 24 mini brownies.

If you love peanut butter cups as much as I, you will make these and you will be so happy you did.

I also found at the grocery store a nifty bag of a mix of peanut butter chips and chocolate chips, so I had two of the ingredients in one bag.  Awesome!  There are a ton leftover so I will be making these again soon.

  I love easy recipes that taste not-easy.
