Grilled Corn with Cilantro Lime Butter
To serve with a spicy burger, I made this cilantro-lime butter to cover our grilled corn with. I made a smaller batch for us to use on four cobs of corn. It was SO easy, and way yummier than just plain butter for this type of dinner. Make this!!

Pioneer Woman's Corn Chowder with Chiles
Soup season has begun. I bought a bunch of ears of corn and then immediately worried I wouldn't use them all. So I decided to use 5 of them at once and make this Corn Chowder. I used three peppers and it had quite a kick to it. I must say it was super delicious and everyone in my family loved it. I will definitely make it again sometime. The corn tortillas on the side were a nice addition, but cornbread would have been killer with it too. Yum! Here is the recipe.

Pioneer Woman's Grilled Corn Guacamole
I fell in love with this guacamole last summer. The grilled corn really adds something special to it. Beware: You will want to eat the whole batch yourself. I think this could easily be halved if you don't want to buy six avocados, but I haven't done it because I love guacamole too much to make a smaller batch. Must try! Here it is. I serve it with my favorite taco recipe (see above).
